I have always used the almond paste recipe for my Xmas cake from the original Delia Winter Xmas book. However, today I used the online recipe and it has been a disaster. It turned out dry and unusable and I had to throw it away. In the original recipe the egg ratio was different.

I’m really sorry to hear that the marzipan didn’t work out for you.
The online version is the Cake Book version, which is half the Christmas Book recipe, give or take a few grams.
The Christmas book used 2 medium eggs, 1 medium yolk and 12.5 mls of flavorings making a total of approximately 123ml of liquid. The half recipe online uses 1 large egg and 8mls of flavorings making a total or 68mls, which is proportionally higher.
