hello,
I cannot find double cream in Greece. What should I use instead?
I can find Single Cream, Crème Fraîche, Clotted Cream and Sour Cream
I am making the Chocolate Chestnut Log.

For this recipe, given the options you have, I would choose clotted cream.
But I’d adapt the way you use it in the recipe…
For the filling, use a tablespoon of clotted cream in place of the double cream.
For the Christmas snow, as clotted cream does not whip, I’d make a clotted cream frosting to get a similar effect by mixing 150g clotted cream with 250g icing sugar.

Thank you so much for your quick reply and recipe adaptation.
After many calls I have managed to track down the 2 last pots of Devon Clotted Cream in Athens. Since Brexit imports from the UK are taking a lot longer.
As we have what I would call single cream (35% Fat) which can be whipped…how about using this for the Christmas snow?
On another note the closed sized pan I have found is 21cm x 28cm x 4cm…however I have a glass Pyrex dish which is 20cm x 30cm x 6cm.
I am having to make my own crème de marrons and thinking of using raw whole chestnuts as not sure about the pre cooked ones. Might roast first then boil in jam sugar adding a vanilla pod. Does that sound ok?

My Irish aunt Ruth makes it every year (one large one without icing) and sends it down to us from the Peloponnesus. It’s “so so delicious and moorish” that I am tempted to have a go at it. Unfortunately, here too, quite a few of the items need to come from the UK but that’s fine.

I think it will bake better in the pan and if your single whips (ours doesn’t), yes you could use that.
