Hi,
Would you please send me the recipe for the Christmas cake made in a 2LB Loaf tin this is just the right size for us also I would be using different fruits because we don’t like peel so I buy the fruit separately Currents Sultanas Raisins Cherries Nuts ect

Hello,
I think (but haven’t tested) that the 2 egg recipe will fit in the DOL loaf tin or a traditional 2lb tins (i.e. boxed type – approximately 19 x 12 cm x 9 cm deep & a capacity of 1250ml).
I would make sure the sides a protected with brown paper and cover the tops with parchment (so that it doesn’t touch the surface of the cake mixture).
Keep the oven temperature the same and have a peek after 1 hour in the oven to see how it’s doing.
