Too much baking powder – only use 3 levelled teaspoons. Oven running too high – cake cooks too fast so it seems cooked when its not and sinks as it cools. Oven opened too soon, or too frequently. Cake not cooked for the full time. Mincemeat brand is particularly wet. Eggs are too small – use 200g beaten eggs. This cake is level, as opposed to domed when baked.
